“There are so many recipes that can be made with kefir water,” says Sabrina Horlyck, co-founder of Squamish-based Everwell Water Kefir. One staff member adds it to his homemade hummus for a probiotic boost, and it’s also great in salad dressings and smoothies. Or experiment with Everwell’s soda flavours — berry, blood orange, root beer, cola — in a fun ice cream float. Here, Everwell’s Probiotic Cream Soda is the base for a Creamsicle-like take. It’s a simple 1-to-1 ratio of juice and soda. Top it with a scoop (or scoops!) of hard gelato or ice cream, such as Whistler-based Lucia Gelato’s Vanilla Bean or Britannia Beach-based Kawartha Dairy’s French Vanilla (see story on the revival of Britannia Village, page 7). —B.S.
- ⅔ cup 100% orange juice
- ⅔ cup Everwell’s Probiotic Cream Soda
- Vanilla ice cream or gelato
Pour juice and soda into a tall glass, leaving room for ice cream. Top with 1 to 3 scoops, as desired. The fermented soda will cause the drink to fizz and grow. Enjoy!
